New Orleans Beignets

Sometimes, you have one of those lazy weekend mornings, where you just wanna ditch your responsible clean eating habits and go all out. Or maybe, if you’re like me, you just have an insatiable sweet tooth and you don’t actually feel the need to find excuses to treat yourself to a dessert whenever the hell you want one… life is too short to skip dessert, am I right?
Just a quick warning to you guys before you start getting busy in the kitchen — the recipe below makes a LOT of New Orleans Beignets… I’m talking like 3 or 4 dozen! I’m not sure why I expected any less than excess when I was working with a Paula Deen recipe, but oh well, you live and learn. All that being said, definitely keep this in mind, and half or quarter the recipe according to the number of beignets you’re actually looking to make.

Ingredients
  1. 1 1/2 cups lukewarm water
  2. 1/2 cup granulated sugar
  3. 1 envelope active dry yeast
  4. 2 eggs, slightly beaten
  5. 1 1/4 teaspoons salt
  6. 1 cup evaporated milk
  7. 7 cups bread flour
  8. 1/4 cup butter
  9. Nonstick spray
  10. Oil, for deep-frying
  11. 3 cups confectioners' sugar
Instructions
  1. Mix water, sugar, and yeast in a large bowl and let sit for 10 minutes.
  2. In another bowl, beat the eggs, salt and evaporated milk together. Mix egg mixture to the yeast mixture. In a separate bowl, measure out the bread flour. Add 3 cups of the flour to the yeast mixture and stir to combine. Add the shortening and continue to stir while adding the remaining flour. Remove dough from the bowl, place onto a lightly floured surface and knead until smooth. Spray a large bowl with nonstick spray. Put dough into the bowl and cover with plastic wrap or a towel. Let rise in a warm place for at least 2 hours.
  3. Preheat oil in a deep-fryer to 350 degrees F.
  4. Add the confectioners' sugar to a paper or plastic bag and set aside.
  5. Roll the dough out to about 1/4-inch thickness and cut into 1-inch squares. Deep-fry, flipping constantly, until they become a golden color. After beignets are fried, drain them for a few seconds on paper towels, and then toss them into the bag of confectioners' sugar. Hold bag closed and shake to coat evenly.
  6. To reheat leftover beignets, microwave for 20 seconds.
